Toasted Coconut Ice Cream

So I'm trying this recipe (here) again... I tried it last week, but ended up leaving the kitchen for literally 20 seconds - 20 seconds! - and the custard curdled. It sucked, but at least I'm wiling to try again lol this time, NO LEAVING THE KITCHEN WHEN THE CUSTARD IS ON THE STOVE!!!!
