Menu This Week

So I finished "Love Wins" by Rob Bell this week. There's lots of pages that are dog-eared, so I'll have lots to blog about I'm sure. It was an interesting read, though I'm not sure I agree with everything Bell had to say...

Last week my menu didn't go as planned once again because I ended up having dinner at Ruth and Peter's (home group night, had some plums, apples, and avocado on toast, yum!), and Wednesday I ate at Mom's because I ended up needing to go to the hospital. Don't worry, I'm fine. I had an infected cyst on my back, I had an appointment with my doctor that day, and he sent me to the hospital to have it removed. No complications, it's all gone, and I'm just on antibiotics until Tuesday to ward off any more infection from the surgery. But it's all gone, they got the capsule out and all, so it shouldn't come back, thank goodness!

Next weekend I'm off to Camp Arnes for Women's Camp, so as of Friday evening, I'm not sure what my meals will be...

But I am in a bit of a rush right now, so here's my menu for this week:

*EDIT* I changed it around because my mom ended up sending me a ton of leftovers home with me after dinner tonight =)

Food Plan

So I ended up going grocery shopping today instead of tomorrow, because tomorrow is Booth grad, and a couple of my friends are graduating! =) So I didn't get a chance to really make a menu before shopping, so I will do my best to make one now with what I've got... I'm also going to add in my weekday lunches to planning, since I tend to portion out my leftovers, so it will help me keep track of which leftovers will be eaten when.

Here's some of my pics from last week! =)

Salmon, steamed veggies marinated in Italian dressing, and cajun couscous: I baked the salmon with mirin, which is like a clear sweet version of teriyaki, but with 9.5% alcohol. But the alcohol gets cooked out as it cooks, so relax... =P

Honey lentils: these actually reminded me a lot of chili, but they were definitely really good! =)

Sweet and Sour Chicken: one word: delicious!

Greek Quinoa Salad: I found this recipe in the Metro newspaper, and since I had all the ingredients except for the cucumber, I decided to give it a try. It was pretty good, I'll definitely make this again! =) Recipe posted below.

Greek Quinoa Salad
1.5 cups quinoa
3 cups veggie broth
1 container grape tomatoes, halved
1 sweet yellow pepper, chopped (I only had green, so that's what I used)
1/2 cup English cucumber, chopped
1/4 cup flat-leaf parsley, chopped
1/4 cup olive oil
3 tbsp apple cider vinegar
1 large clove garlic, minced
Crumbled feta cheese

Place quinoa in mesh sieve and rinse well under running water; drain and set aside.

In pot, bring broth to a boil and add quinoa. Stir, reduce heat to low, cover and cook for 20 minutes or until broth is absorbed. Fluff with fork into bowl. Add tomatoes, pepper, cucumber and parsley.

In bowl, whisk oil, vinegar and garlic. Drizzle over quinoa and vegetables. Sprinkle with feta cheese.

Easter Weekend

'Twas a busy weekend! Or so it seemed... Friday I slept in, then Alisha came over for a bit before we headed to Weetamah for the Good Friday service.

Saturday we went to Brandy's and helped prep her living room to paint her wall, then went with her to go pick up the paint. We went to the Forks to get me some Triops (yippee!!! =D) and spaghetti, then we went back to my place and had spaghetti and sauce for dinner.

Sunday Alisha and I went to Weston for the Sonrise service at 8:30, and (of course) the 11:00 service, where Alisha joined the worship team with Curtis' guitar (yay Leesha!). Afterwards, Alisha and I each went home.

Today I went to my mom's for lunch, then we did our grocery shopping at Bulk Barn and Superstore. Then she came over for dinner. I was going to have honey lentils with her, but I had forgotten that she's on a 17-day diet where she needs to eat only certain foods each day. Today was fish, and so I opted for salmon. It turned out really well actually! =D I just put some of my mirin sauce on it, wrapped it in foil and popped it in the oven to bake, and ohhhhhh man was it ever delicious!!! =D Mom also brought some steamed veggies that she had marinating in Italian dressing, they were pretty good actually! =)


Doesn't sound like a busy weekend eh? Lol well it wasn't really... But it my spare time at home, I stitched. A lot. I have 5 weeks to finish up this project I'm currently working on, which shouldn't be a problem now since I got a lot of work done on it this weekend... Then I have one more project I need to get done for someone else, then that's it for projects to make for others! So I think I'll take a break from it for a while lol...

So seeing as how I had to change up today's menu, I kinda had to do a bit of rearranging for the rest of the week:

Dinner: Baked salmon with mirin, marinated steamed veggies (Mom brought them), and cajun whole wheat couscous
I also made Honey Lentils for lunches, though I'm not sure I'll need it...

Start Again

I've really been slipping in my eating habits again. Skipping meals, junk food, all that jazz... So I'm gonna start making weekly meal plans again to get myself on track, as well to help with weekly grocery shopping. I've been going every Sunday afternoon with my mom, so hopefully by planning my meals, I can make a list based on that, and therefore won't buy so much stuff that I have to figure out what to do with it by the end of the week/before it goes bad. And because I've been going through some recipe books tonight, I'm going to start with tomorrow, and through til next Saturday.

Also, I've started using my Crockpot, yay! Oh man, what a great device! I haven't yet cooked anything during a work day, because I'm gone for at least 10 hours because I commute by bus rather than car, and I don't trust my food not to burn. But, I did make oatmeal once (didn't care for it, I'd rather just cook it in a pot...), Quebecois Chicken, and something else that I'm completely blanking on at the moment... But I do intend to use it some more this week! =)

A note: when I say cereal and berries, it's more like a bowl of berries with a bit of cereal and milk. Usually it's a banana, 4-5 strawberries, a few blueberries, a few raspberries, and a few blackberries, but it really depends on which berries are available at the grocery store each week.

Breakfast: Pancakes with any berries left from the week
Dinner: Leftovers


Stir-Fry
7 oz Chow Mein noodles
1 tbsp vegetable oil
1/2 onion, sliced thinly
4 cups bean sprouts, washed and drained
1 tbsp soy sauce
2.5 tbsp oyster sauce
1/2 tsp sesame oil (optional)
1/2 cup cooked chicken (optional)

Put noodles in 8 cups of lightly salted boiling water. Boil and 2 minutes, stirring occasionally. Do not over cook. Drain and set aside.

Heat the wok or skillet over high heat. When smoke arises add vegetable oil. Cook onion until transparent. Add bean sprouts, soy sauce, oyster sauce, and sesame oil; stir fry for 2-3 minutes.

Add noodles and meat to the mix in the wok. Continue to stir fry and mix thoroughly over medium high heat for 3 minutes.

Serve hot or cold.


Zesty Spinach Soup
This is from my "Cooking Light: Fresh Food Fast: Weeknight Meals" book.
2 tsp olive oil
1.5 cups chopped onion (1 small)
2 cups vegetable broth
1 cup (1/2") diced potato
1/2 tsp salt
1/4 tsp black pepper
1 (6oz) pkg fresh baby spinach
1/2 cup sour cream, divided
1 tsp grated lemon rind

Heat oil in a large saucepan over medium heat. Add onion; sauté 3 minutes. Add broth and next 3 ingredients. Cover and bring to a boil over high heat; reduce heat, and simmer 8 minutes or until potato is very tender, stirring occasionally. Add spinach; cover and cook 2 minutes or until spinach wilts.

Place half of soup and 1/4 cup sour cream in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Blend until smooth. Pour into a large bowl. Repeat procedure with remaining soup and 1/4 sup sour cream.

Serve with a dollop of additional sour cream, if desired, and 1/4 tsp lemon rind.
Yield: 4 servings (serving size: 1 cup)


Sweet and Sour Chicken
This is from my "Company's Coming: Practical Gourmet: Inviting Asian Flavours" book.
1/4 cup cornstarch
2 tbsp flour
1/4 tsp baking powder
1/4 tsp sea salt
1 lb boneless, skinless chicken breast halves, patted dry, cut into 1" pieces
3 cups cooking oil
2/3 cup brown sugar, packed
1/2 cup rice vinegar
2 tbsp soy sauce
2 tbsp tomato paste
2 tsp cornstarch
1 tbsp cooking oil
1 cup thinly sliced red pepper
1/2 cup sliced water chestnuts
1/3 cup chopped green onion (1" pieces)
2 garlic cloves, minced

Combine first 4 ingredients in a large resealable freezer bag. Add chicken and toss until coated.

Heat cooking oil in a large frying pan on medium heat. Add chicken, a few pieces at a time, and shallow-fry for 3 minutes, turning occasionally, until golden. Transfer to a paper towel-lined plate to drain.

Combine next 5 ingredients and set aside.

Heat a wok or large frying pan on medium-high heat. Add cooking oil. Add remaining 4 ingredients and stir fry for 2 minutes until red pepper is tender-crisp. Stir in vinegar mixture until thickened. Add chicken and stir until coated.

Serve with rice.
Yield: about 4 cups


Zucchini-Potato Pancakes
This is from my "Cooking Light: Fresh Food Fast: Weeknight Meals" book.
2 cups shredded potatoes
1 cup shredded zucchini (about 1 small)
1/4 cup panko crumbs
4 large egg whites, lightly beaten
1/4 cup shredded Parmesan cheese
1/4 tsp black pepper
Cooking spray

Combine first 6 ingredients in a large bowl.

Heat a large nonstick skillet over medium heat; heavily coat pan with cooking spray. Spoon about 1/5 cup potato mixture into 2 (5") circles in pan. Cook 5 minutes; turn and cook 4 minutes or until potato is tender. Remove pancakes from pan, and keep warm. Repeat procedure with remaining potato mixture.

Serve with sunny-side up egg, and salsa and sour cream, if desired.
Yield: 4 servings (serving size: 1 pancake and 1 egg)

This past week has been long, even though it was only a 4-day week... Then getting sick on Friday didn't help... I feel like I'm falling back into a slump... I feel things I've never felt before, and I can't even say here what it is... I know what it is, but I'm almost too afraid to admit, though I don't even know why... I'm afraid of what people would think, I'm afraid of what I would think if I even admitted it to myself...

Food Planzzz

This has to be quick tonight cuz I'm tired and wanna get to bed to get a good night's sleep to be fully functional tomorrow morning doing childcare at CFOT's in-Sunday. PS I was trying to make a long run-on sentence lol... Here we go!

A Week in a Glance

This has been quite the busy week for me this past week! Worked lots, and the nights I wasn't working I was out with friends! =) Not quite true... Monday night I was home... But Tuesday and Thursday I ended up working 6-12 and 6-1 respectively because one of our cooks went to jail for stabbing someone. Great hey? I wasn't happy about the reason I got to work those shifts, but was thankful for the hours nonetheless! With those two shifts plus the one I worked tonight (5-9), plus having 4 extra hours at the daycare this week because of one of the staff being off, brings my total hours worked this week to 45. 45!!!! =D

Wednesday was pool night @ Tavern United Pembina, it was fun! =) I was VERY excited about them having potato nachoes, since Boston Pizza doesn't have them anymore... Except TU's aren't spicy potatoes like BP's, but that was fine =) I didn't play too bad, I had 7, 3, 7, 10, for a 27, which is a bit better than my average, so that was good! AND I found something out from one of my team members as we were getting ready to leave, which completely made my night! Though I can't share it here, sorry... ;)

Friday night after work at the daycare, I headed over to Sasha's for her birthday party, it was so fun!!! =D Her mom made hamburgers for dinner, DELICIOUS!!!!! =D Everyone was saying that they're even better than Hambo's (?), but I've never been there so I can't really say... But they were so yummy, I had two!!! She had also made - with the help of her friend Michelle - this big cake shaped like a castle, completely with a "secret garden" in the courtyard, a slain dragon in the front (courtesy of Darren lol), vines all over the place, turrets with flags, and of course, Disney princesses placed around the castle walls! It was AMAZING!!!!! Zach brought Apples to Apples, and we played two rounds, so fun!!! And we played "I've never" with pop, with so many insiders made!!! Everyone's favourite: Dale: "I've never... given... myself... a face... wash....?" Me: "......like, with snow?" Jason: "'I'm gonna give you a face wash!' 'Not if I get myself first!!!'" ROFL priceless!!!!!

After the fun and games at the house, we went to Lazer Jungle in Stonewall! Oh my gosh, my first time EVER going laser tagging, SO MUCH FUN!!!!!!! =D Why was I not introduced to this earlier?!?!?!?!? Seriously! And why do we not go play every night?!?!? The first game we played everyone for themselves, and I didn't do too bad once I got the hang of it and used to the concept of needing to hide LOL! The second game we played teams, and I did much better haha... And we got slushies afterwards too, included in the price of the two games!!! =D

I think that's about it to blog about this week... On to my meal plan! =)

Better Late Than Never!

I meant to post this on Sunday, but it's been a busy couple of days! Sunday I was home for a couple minutes (literally) in the afternoon, then didn't get home til late and I crashed in bed right away. Yesterday I wasn't feeling well at all and crashed at 8:30 lol... Well actually it was about 7 when I fell asleep, but I wasn't in bed, but I woke up at about 8:30, got changed and crawled into bed. Slept til about 10:30, got up, had something to eat (cuz I didn't eat supper), went back to bed and slept until 10am! And I am feeling rather refreshed, although still battling a sore throat... =(

So here's my meal plan for this week!

Monday: made Tuna Helper, didn't eat any, had a bowl of Honey Nut Cheerios at 10:30pm
Tuesday: eat @ work
Wednesday: Pizza Pops

Update/Meal Plan

'sup y'all!!! =P Okay, so it's been a week AGAIN since my last update, but it's been a busy week! Actually I'm only even updating now because there is a quote from the book I'm currently reading - "The Furious Longing of God" by Brennan Manning (check out my 2010 book list!). I'm reading the part about praying to our Father, and this is what he writes at the end:

"Is your own personal prayer life characerised by the simplicity, childlike candor, boundless trust, and easy familiarity of a little one crawling up in Daddy's lap? An assured knowing that the daddy doesn't care if the child falls asleep, starts plaing with toys, or even starts chatting with little friends, because the daddy knows the child has essentially chosen to be with him for that moment? Is that the spirit of your interior prayer life?"

Because the daddy knows the child has essentially chosen to be WITH him for that moment. Wow... That part really kind hit me hard... Like, I can picture this happening with a daddy and a little toddler. I see that even happening with the little ones I work with at the daycare. When I'm sitting down on the carpet and playing with them, often there is one (or two!) who will come sit in my lap but play with other toys with the other kids. And I still feel special because that child has chosen to be with me. WITH me. Can you imagine how God would feel in that position? With His child coming to sit in his lap just to be WITH Him? How special God would feel? Makes you think, eh? =)

Anyways, on to the "update" portion of this post lol... This past week has been pretty busy! Though it is really about this weekend that I wanna blog about... SOOOOO fun, oh my goodness!!! =D Saturday I was in the greatest mood all day! Even while at work, I was just so happy, it was great! Then after work I headed over to Brandy's for her house warming party. Fantastic time! Oh gosh, there were.....*thinks*.....11 (?) people all together that came by, and we pretty much just hung out, ate food (all provided by the lovely Brandy!), drank, listened to music, took some AWESOME pics (that I am excited to be getting from Brandy's cam on Wednesday to post to FB!), and formed a bunch of inside jokes LOL! Honey and onions, callerpitters, strainers, just to name a few! Ahhhh good times! And then everyone left except me, Brandy, and Trapper... The two of us crashed the night there cuz Brandy lured us to stay with the offering of breakfast in the morning! So I totally got to share a bed with Brandy... ;) haha but funny story, as soon as we actually stopped talking, she was asleep in like 10 seconds, if even...

Then, as promised, we had pancakes and bacon for breakfast, it was delicious!!! =D and my day was totally made completely because I got to hang out with Brandy ALLLLLLLL DAY!!! =D seriously lol we watched Labyrinth (good movie, I even have song lyrics stuck in my head as I write this lol... "you remind me of the babe... the babe with the power... the power of voodoo...) then we did some origami while watching the hockey game, then we went to her mom's for dinner (excellent dinner too, oven roasted veggies and roast beef, with biscuits! =D), then we went to see avatar with Dennis. Good movie!!!! And I totally wore the 3D glasses all the way home!

So yeah! That's about it for an update lol... On to the meal plans!

Here We Go...

Oh my goodness, another week gone by without a blog post... For shame Stacey... =P Well, this past week has been busy, but I was able to take Monday off... Though it should really count since I only took it off cuz I had such a bad head cold that I was getting dizzy spells and could barely even make it to the washroom..... =S Getting better though, still have a bit of sinus and nose thing going on, but as long as I have plenty of facial tissues I'm doing good! =)

"How's your New Year's resolutions Stacey?" Fantastically horrible, thanks for asking LOL! Oh my goodness I have been failing at pretty much every single one, still... =P Though I have been eating a little bit healthier, and passing up on candy/energy drinks at times, but still giving in... BUT I have cut back a LOT, so that's a start, I'm not superly disappointed =) I also haven't been on the Wii too much since getting it (well, Debby bought the Wii, and I'm borrowing my mom's Wii Fit). I got it last Sunday, I did go on it that night, missed Monday cuz I was sick, went on Tuesday and Wednesday, but that was about it... I was gonna go on tonight, but Debby's on it, but we're gonna play some Wii Sports together once she's done her 30 minutes on Wii Fit =) So that's that!

As for spiritual disciplines, I have completely not kept up with daily devotions... And for these past two weeks I haven't tithed, BUT I have good reason LOL! Last Sunday I was at CFOT so I couldn't tithe to my church... And this week I am completely broke and had no money to take out of the bank to give... Please don't get me wrong, I am not intending to just give up on that! Next week is payday for both jobs, and the very first thing I'm taking money out for is my tithes for 3 weeks! Yes, I still intend to give my tithes for the weeks I've missed... Though I've been thinking about it, and I only get paid every two weeks, so I may just give my tithes every two weeks, making sure that that money is the first bit that comes out!

I unno... But I'm gonna head upstairs now and play some Wii Sports with Debby! =) Then perhaps make some cookies!!! Gotta get started for Kayla's cookie thing she's got goin on, woop! =)

A Whole Week Gone Already?!?!?!?

Wow, sorry for not updating all week, it's been another long one!!! Between the two jobs, I had 42 hours for the week, whew that's a lot!!! Gonna be a nice paycheque, but I'm not sure if it was worth it... I ended up with a pretty good head cold this weekend without a chance to actually slow down and rest, not good... I'm hoping it doesn't hit me superly hard tomorrow, cuz I have an 8-hour shift at the daycare that I'm not wanting to give up! =( I suppose if I have to then I'll have to, but we'll just see how I feel in the morning =)

So, on to this week's meal schedule! I've decided to just put dinners, since breakfast is always just cereal anyways, except Saturdays when I actually make a big breakfast =P Here it is:

Monday - Left over spaghetti and sauce
Tuesday - Roasted vegetable lasagna
Wednesday - Pizza Pops
Thursday - Possibly going to Mongo's! =D
Friday - Eat @ work
Saturday - Eat @ work
Sunday - Left-over lasagna

I'd blog more, but I'm pretty tired, and I wanna get some sleep so I hopefully feel better in the morning... =)

Meal Planning!

Here's this week's plan:

Monday:
-Cheerios
-Leftovers for lunch and dinner

Tuesday:
-Cheerios
-Spaghetti and home-made sauce

Wednesday:
-Life
-Pizza Pops

Thursday:
-Life
-eat @ work

Friday:
-Cheerios
-eat @ work

Saturday:
-waffles or pancakes
-eat @ work

Sunday:
-Cheerios
-roasted vegetable lasagna from Superstore (SOOOOO yummy, looking forward to it! =D)

Today I made the spaghetti and sauce. Stopped at Safeway on the way home from the daycare to get some canned diced tomatoes (they ended up being on sale, 2/$4 for the bigger cans woohoo!) and mushrooms. The way I cooked it was I put one can in a frying pan and heated it while I cut up my veggies... I had red yellow and green peppers (about half of each), half a red onion, and the mushrooms I bought, cuz those just HAVE to be fresh - not canned - when they're going into a home-made sauce!!! =D And I put some Mrs. Dash and some of Christina's Garlic Plus stuff she has (she was home and let me have some, thanks!!!) And of course, as I was making the sauce, I had the spaghetti cooking too...

Oh my word, I LOVE making home-made spaghetti sauce!!! I love having tomato chunks and fresh veggies, rather than just the jarred sauce... I'd even rather have spaghetti with some butter and spices rather than jarred sauce... But home-made, oh my gosh!!! And it was so colourful, which just adds to it! =) I was chatting with Christina tonight too about eating healthy, and we both agree that when we actually have enough time to cook healthy meals like this, we can make it how ever we want, and it makes it fun! Yes, cooking can be fun! Haha but this is coming from a girl who LOVES cooking! ...when she has the time... =P

Here's Another!

I forgot to mention yesterday exercising as part of my resolutions... haha... mainly forgot to cuz I definitely haven't been doing it... Although I've been walking a little more... getting off the bus a stop early, walking instead of accepting offers of being driven... It's not much, but it IS a start, and I feel good about it =)

As well, yesterday I had toyed with the idea of meal planning... I did sit down yesterday and make this week's schedule, here it is:

Monday:
Breakfast - Kashi cereal
Lunch - Clam chowder, apple, granola bar (ended up not eating the chowder though cuz I was full after the apple and bar lol...)
Dinner - Eat at work (though I ended up not working so I made shredded hashbrowns, bacon, and scrambled eggs at home)

Tuesday:
Breakfast - Life
Lunch - Apple, yogurt with granola
Dinner - Stir-fry (red yellow green peppers, red onion, mushrooms, broccoli)

Wednesday:
Breakfast - Kashi cereal
Lunch - Grapes, granola bar
Dinner - not sure yet... it's pool night so I'd either eat at The Mix (where we're at this week) or make something to bring with me, I'm thinking Chef Boyardee =)

Thursday:
Breakfast - Cheerios
Lunch - Banana, yogurt with granola
Dinner - Eat at work

Friday:
Breakfast - Life
Lunch - Grapes, yogurt with granola
Dinner - Left-over stir-fry

Saturday:
Breakfast - Waffles and bacon
Lunch - Granola bar, banana
Dinner - Eat at work

Tuesday-Sunday lunches will be light because I don't work until 1:30, and therefore will sleep in, therefore not needing a big lunch like on Mondays, when I work 8-5 split shift... Of course, I realise that I get hungry in the evening, like around 8 or 9, so I bought healthy snacks! Breton crackers (actually, the no-name brand...), nuts, not to mention all the fruits/veggies/granola bars/yogurt I have now, goodness!!! Today went well, I stuck to my planner, it feels good! =) Now the only problem is that I have a lot of Smarties kickin around LOL! I bought a package of them for pool nights, and then got a big tin of the little boxes for Christmas... So I'm trying to resist eating them all up at once, but pacing myself... Yes, I'm still gonna eat them, I'm not just gonna get rid of them LOL! But moderation is definitely key!!!
