Day 12

I'd put a picture of my daycare kids up, buuuuuuuut I don't think that's allowed... ;)

But, it is children that I love, I love being able to be a part of their growing years, helping them, guiding them, teaching them, leading them... =)

Jesus said, "Let the little children come to me, and do not hinder them, for the kingdom of God belongs to such as these. Truly I tell you, anyone who will not receive the kingdom of God like a little child will never enter it.” And he took the children in his arms, placed his hands on them and blessed them.

The fact that people feel the need to use child soldiers.  Especially now that I've worked with kids, it angers me that there are people in this world who have no problem training children to kill.  Looking at this picture fills me with anger, and yet makes me want to cry for this child.  His life has been stripped away.  And for what?  A war that shouldn't even be his to fight.  This world sickens me sometimes.....

Day 9

Georgio and I have been through a heck of a lot together.  She was there for me when I was having a lot of issues with my mom, and with my personal safety.  She will always and forever be my sister best friend thing =)

Karen has also gotten me through a lot, especially when I was suicidal.  She was always there to listen and pray with me and even picked me up once or twice when I was home alone and very tempted to hurt myself.  She always seems to have a different way of looking at things, able to shed new light on anything, I've learned a lot through her.

Merry Christmas!

Christmas turned out pretty good so far this year =)  I was really worried about how plans would play out, especially for Christmas Eve.  But it went well!

My Christmas celebrations started Wednesday when Alisha and I did our gift exchange.  I went to her mom's (Faye) after work because she had my big present there.  It was a big cabinet meant for putting my memories of Wayne in, she had it made by a friend at her church.  It's beautiful, and I almost cried.  Then her mom gave us a ride back to my place, and I put Wayne's picture, a plaque he got for me ("Why God Loves Little Girls"), a plaque I made after he died, his flag (he fought in Vietnam and so got a flag at his funeral), and a few other things from/for him.

Then we opened more gifts.  I was more excited for Alisha to open her gifts than me receiving the rest of my gifts lol.  But I got a gift card for an intro week of yoga, and a Saskatchewan Roughriders plate, chyeah! =D

Christmas Eve morning I went with Alisha to her mom's for a bit, and when we got there, Nicole had just arrived as well to drop off Alisha's gift, so we got to hang out with her for a bit, which is always fun =)  Then I was able to open my gifts from Faye, which was a gift card for Safeway and some really cute puppy slippers (they're so soft too!)  After that Alisha drove me to my mom's place so I could ride with my mom back to Faye's for dinner.

Dinner was delicious!  Turkey, stuffing, Brussel sprouts, mashed potatoes, gravy, and turnip puffs.  Mmmmmmmmmm =)

After dinner we all (Alisha, myself, our mom's, and Alisha's brother Travis) went to Alisha's church (Churchill Park United) for their Christmas Eve service.  It was a great service, and they did a play called "Of Pigs and Paintings" which really impacted me.  It was about a painter who painted "the greatest Nativity scene ever painted!"  But as he was finishing his painting the night before Christmas, there were a bunch of animals that showed up in his painting that he didn't paint, and they wanted him to paint them in because they were there but nobody ever gets to see them in paintings.  Their talk ended up about whether Jesus cried or not, which Mary explained that he did, just like any other baby, because as much as he was fully God, he was also fully human.  So the painter added a single tear drop in the eye of baby Jesus in his painting.  Apparently this painting did actually exist, but it has been lost through the years.  There's still one painting still around from this painter, whom I can't remember the name of currently, but I would have LOVED to see this painting of the crying baby Jesus.

Afterwards, we parted ways.  I went back to my mom's and everyone else headed back to Faye's for the night.

Christmas morning at my house was great!  Alisha came over about 9:30, and we had breakfast: waffles, whipped cream, blueberries, strawberries, bananas, apple pancake, sausages, turkey bacon (my mom made some tofu turkey for Alisha), it was sooooooo good!!!!! =D  After we cleaned up we opened presents.  I was so excited for my mom to open her gifts from me, I got her a few books from her favourite authors.

Here's what I got:
-cabinet for Wayne's memories
-Riders plate
-gift card for intro week of yoga
-Safeway gift card
-puppy slippers
-vacuum
-bookshelf
-Superstore gift card
-Timmy's gift card
-Chapters gift card
-Walmart gift card
-Bulk Barn gift card
-bath and body stuff
-Band-Aids
-Echinacea (since I'm always sick LOL!)
-soy nuts with sea salt
-teas
-NO SOCKS!
-NO UNDERWEAR!

I'm sure I'm missing a thing or two... But that's the gist of it.  Lots of stuff, I was definitely very grateful! =)  I did not get the wok with a lid I asked for, but we haven't had our family dinner/gift exchange yet - which means I've yet to receive gifts from my grandmother ;) - so I'm still hopeful.

So there you have it!  Stacey's Christmas celebrations 2010 as of yet! =)

Day 8

Lol this one was taken yesterday at my mom's, I was trying to get a picture of Abby, but she ended up licking the camera lens.

Day 7

In thinking about this, I thought about what I would grab first if there was ever a fire. As much as I am so attached to so many things I own - phone, camera, rock collection, pictures, etc. - the first thing I would actually grab would be my guitar.

This Pogo Guy Is AMAZING!!! =D

So, I found a video called Upular through one of the sites I keep updated on, and this guy who calls himself Pogo basically took vocal samples from the movie Up and added some music of his own, and made a song. He's done this with a few other movies too, and I've head a couple, but in my opinion this is the best! =D

He also did one with real life sound samples, and this is also amazing! =)

Day 45

Wow, haven't blogged in a week and a half... Sorry readers!  Been so busy lately with just life in general, and also went on a youth retreat this past weekend, so there hasn't been much time left for blogging...

Life has been busy, somewhat stressful, but mostly good =)  My eating habits have been a bit up and down, especially on the youth retreat, but I think I did relatively well! =)  We went to Beaver Creek Camp, left Saturday morning at about 11, got back Sunday night at like 10:30.  I knew it'd be a long bus ride and I'd need to provide myself with some healthy snacks, so I brought some bananas, grapes, healthy pumpkin cookies, home-made trail mix, and 3 bottles of water.  I"m so glad I brought so much because I found that when I was able to eat my own stuff, I wasn't tempted by the cookies and chips and pop that were constantly offered to me. So that felt good =)  But it was difficult being unable to control what the camp staff cooked and how it was done, but I was very thankful that fruit was provided for breakfast, and I made sure to let the staff know it was much appreciated =)

So anyways, I have a couple recipes I have tried this past week and half, and I'd like to share them!  First comes the creamy quinoa primavera - which was really yummy - and dum aloo, which I made tonight and is also yummy! =)

A shout out to LA Butler, she told me she made the baked curried lentils and enjoyed them, and so I sent her the link to my blog here and let her know where she could find more delicious recipes! =)

Creamy Quinoa Primavera
1½ cups uncooked quinoa
3 cups chicken broth (I used vegetable broth)
2 oz. cream cheese
1 tbsp. basil
2 tsp. butter
2 garlic cloves
5 cups thinly sliced vegetables
2 tbsp. grated cheese

Rinse quinoa thoroughly; drain. Heat quinoa and broth to boiling in saucepan; reduce heat. Cover and simmer 10-15 minutes or until all broth is absorbed. Stir in cream cheese and basil; cover and remove from heat. Melt butter in skillet over med-high heat. Cook garlic and butter until golden. Stir in vegetables. Cook about 2 minutes stirring frequently, until vegetables are crisp-tender. Toss vegetables and quinoa together and top with cheese.

Dum Aloo
4 medium-sized potatoes cut and sliced into small edible chunks
6-7 tbsp. cooking oil
1 1/2 cups finely chopped onion
1 tsp. ginger powder
2 tsp. ground cumin
4 tsp. ground coriander
1 tsp. turmeric
1 tsp. (or less if desired) of crushed red pepper flakes
1 tsp. garam masala
1 cup canned tomatoes with juice
2/3 cup plain yogurt
4 tsp. sea salt

Place cut potatoes into water and bring to a boil. Boil for approximately 4 mins. until they are tender but nowhere close to falling apart. They need to remain firm. Meanwhile, in a frying pan add all of the spices, oil, and onion up to and including the garam masala. Cook until onions are tender. Drain potatoes and add to the frying pan. Add tomatoes, yogurt and sea salt. Bring to a strong simmer and cook until potatoes are cooked through and edible. They should still be firm though. Once this is done, the recipe is complete!

Day 35

So, I'm deciding that I'd still like to post meals and pictures as part of my new direction, but probably not every day.  I would like to post pictures and recipes of new recipes I try though, so today I am posting about pumpkin soup.  I've tried this recipe a couple years ago, but I certainly don't remember it being this good!  I had used shredded pumpkin before, which gave a different texture, and I didn't really care for it.  But this time I used mashed pumpkin, and it's very much enjoyable! =)  I only made a half recipe though, because I didn't think my pot would be big enough lol.  But it gave me enough for my lunches for today and tomorrow, so that's perfect =)

So here's the recipe!

Pumpkin Soup:
2 tbsp. butter
1 small onion, chopped fine
2 tbsp. flour
1 tsp. salt
2 cups of vegetable broth
2 cups of cooked, mashed pumpkin
2 cups of milk
1/4 tsp. nutmeg
1/8 tsp. thyme

Melt butter in large pot. Add onion and sauté until soft but not brown. Blend in flour and salt. Add broth, pumpkin, milk and spices. Cook, stirring constantly, until slightly thickened.

Day 33

Wow, so I've made it a month through this plan, excellent! =D  I did crash a couple times - Thanksgiving dinners with pumpkin pie; a bag of chips, a box of smarties, and half a bottle of Sprite at pool; a few Starbucks drinks and Timmy's coffees - but overall I think I did really well, and I am planning to keep going! =)

I would like to share a picture of the Masoor Daal I made for dinner last night, it was SOOOOO good, and there was a little bit left over so I'm taking it for lunch today =D

So I guess I will do what Melissa is doing with her new direction, and will update on Mondays to see how I'm doing... That's all for now! =)

Days 26-28

To be honest, these past few days have been quite a blur.  I don't really remember what I had for dinner on Friday, I think I only had a couple bites of fruit... Last night I had Thanksgiving dinner at Alisha's mom's, and tonight I had Thanksgiving dinner at my mom's.  I ate more than I should have both nights, and probably had more pumpkin pie and whipped cream than I should have...  It's been a stressful time though, with Alisha going through a lot of issues right now, and I don't really wanna go into it here in order to give her a bit of privacy... But as of right now she is in a 24-care facility through the mobile crisis unit, and she needs a lot of prayer.  Her mom and I as well could use some prayer as her support system...

Anyways, starting tomorrow I'm hoping to get back into the groove of eating properly and healthily.  Sorry, no pictures today.

My Talent

Hmmm... Well I guess my talent is music.  Not everything about music, mind you lol, but I can sing, I can play guitar, and I can appreciate many kinds of music. One of my favourite things to do, especially when I'm feeling down, is to pick up my guitar and just play and sing.  I may have only paid $75 for my guitar, but it is one of my most prized possessions, and I would be DEVASTATED if anything happened to it!  My guitar has been with me through a lot of emotional ups and downs, and it means a lot to me.
