This Pogo Guy Is AMAZING!!! =D

So, I found a video called Upular through one of the sites I keep updated on, and this guy who calls himself Pogo basically took vocal samples from the movie Up and added some music of his own, and made a song. He's done this with a few other movies too, and I've head a couple, but in my opinion this is the best! =D

He also did one with real life sound samples, and this is also amazing! =)

Day 45

Wow, haven't blogged in a week and a half... Sorry readers!  Been so busy lately with just life in general, and also went on a youth retreat this past weekend, so there hasn't been much time left for blogging...

Life has been busy, somewhat stressful, but mostly good =)  My eating habits have been a bit up and down, especially on the youth retreat, but I think I did relatively well! =)  We went to Beaver Creek Camp, left Saturday morning at about 11, got back Sunday night at like 10:30.  I knew it'd be a long bus ride and I'd need to provide myself with some healthy snacks, so I brought some bananas, grapes, healthy pumpkin cookies, home-made trail mix, and 3 bottles of water.  I"m so glad I brought so much because I found that when I was able to eat my own stuff, I wasn't tempted by the cookies and chips and pop that were constantly offered to me. So that felt good =)  But it was difficult being unable to control what the camp staff cooked and how it was done, but I was very thankful that fruit was provided for breakfast, and I made sure to let the staff know it was much appreciated =)

So anyways, I have a couple recipes I have tried this past week and half, and I'd like to share them!  First comes the creamy quinoa primavera - which was really yummy - and dum aloo, which I made tonight and is also yummy! =)

A shout out to LA Butler, she told me she made the baked curried lentils and enjoyed them, and so I sent her the link to my blog here and let her know where she could find more delicious recipes! =)

Creamy Quinoa Primavera
1½ cups uncooked quinoa
3 cups chicken broth (I used vegetable broth)
2 oz. cream cheese
1 tbsp. basil
2 tsp. butter
2 garlic cloves
5 cups thinly sliced vegetables
2 tbsp. grated cheese

Rinse quinoa thoroughly; drain. Heat quinoa and broth to boiling in saucepan; reduce heat. Cover and simmer 10-15 minutes or until all broth is absorbed. Stir in cream cheese and basil; cover and remove from heat. Melt butter in skillet over med-high heat. Cook garlic and butter until golden. Stir in vegetables. Cook about 2 minutes stirring frequently, until vegetables are crisp-tender. Toss vegetables and quinoa together and top with cheese.

Dum Aloo
4 medium-sized potatoes cut and sliced into small edible chunks
6-7 tbsp. cooking oil
1 1/2 cups finely chopped onion
1 tsp. ginger powder
2 tsp. ground cumin
4 tsp. ground coriander
1 tsp. turmeric
1 tsp. (or less if desired) of crushed red pepper flakes
1 tsp. garam masala
1 cup canned tomatoes with juice
2/3 cup plain yogurt
4 tsp. sea salt

Place cut potatoes into water and bring to a boil. Boil for approximately 4 mins. until they are tender but nowhere close to falling apart. They need to remain firm. Meanwhile, in a frying pan add all of the spices, oil, and onion up to and including the garam masala. Cook until onions are tender. Drain potatoes and add to the frying pan. Add tomatoes, yogurt and sea salt. Bring to a strong simmer and cook until potatoes are cooked through and edible. They should still be firm though. Once this is done, the recipe is complete!

Day 35

So, I'm deciding that I'd still like to post meals and pictures as part of my new direction, but probably not every day.  I would like to post pictures and recipes of new recipes I try though, so today I am posting about pumpkin soup.  I've tried this recipe a couple years ago, but I certainly don't remember it being this good!  I had used shredded pumpkin before, which gave a different texture, and I didn't really care for it.  But this time I used mashed pumpkin, and it's very much enjoyable! =)  I only made a half recipe though, because I didn't think my pot would be big enough lol.  But it gave me enough for my lunches for today and tomorrow, so that's perfect =)

So here's the recipe!

Pumpkin Soup:
2 tbsp. butter
1 small onion, chopped fine
2 tbsp. flour
1 tsp. salt
2 cups of vegetable broth
2 cups of cooked, mashed pumpkin
2 cups of milk
1/4 tsp. nutmeg
1/8 tsp. thyme

Melt butter in large pot. Add onion and sauté until soft but not brown. Blend in flour and salt. Add broth, pumpkin, milk and spices. Cook, stirring constantly, until slightly thickened.

Day 33

Wow, so I've made it a month through this plan, excellent! =D  I did crash a couple times - Thanksgiving dinners with pumpkin pie; a bag of chips, a box of smarties, and half a bottle of Sprite at pool; a few Starbucks drinks and Timmy's coffees - but overall I think I did really well, and I am planning to keep going! =)

I would like to share a picture of the Masoor Daal I made for dinner last night, it was SOOOOO good, and there was a little bit left over so I'm taking it for lunch today =D

So I guess I will do what Melissa is doing with her new direction, and will update on Mondays to see how I'm doing... That's all for now! =)

Days 26-28

To be honest, these past few days have been quite a blur.  I don't really remember what I had for dinner on Friday, I think I only had a couple bites of fruit... Last night I had Thanksgiving dinner at Alisha's mom's, and tonight I had Thanksgiving dinner at my mom's.  I ate more than I should have both nights, and probably had more pumpkin pie and whipped cream than I should have...  It's been a stressful time though, with Alisha going through a lot of issues right now, and I don't really wanna go into it here in order to give her a bit of privacy... But as of right now she is in a 24-care facility through the mobile crisis unit, and she needs a lot of prayer.  Her mom and I as well could use some prayer as her support system...

Anyways, starting tomorrow I'm hoping to get back into the groove of eating properly and healthily.  Sorry, no pictures today.

My Talent

Hmmm... Well I guess my talent is music.  Not everything about music, mind you lol, but I can sing, I can play guitar, and I can appreciate many kinds of music. One of my favourite things to do, especially when I'm feeling down, is to pick up my guitar and just play and sing.  I may have only paid $75 for my guitar, but it is one of my most prized possessions, and I would be DEVASTATED if anything happened to it!  My guitar has been with me through a lot of emotional ups and downs, and it means a lot to me.

Days 22-25

Wow, I've missed a lot of days!  To be honest, I haven't been eating much for dinners, because I would end up snacking on leftover lunch stuff and then not be hungry for dinner.

Monday evening was Christina and Luke's wedding, and so of course I stayed for the dinner.  The whole thing was out at Winkler Bible Camp, and it was a BEAUTIFUL wedding! I'm soooo happy for them!!! =D  For dinner there was chicken with barbecue sauce, baked potatoes, mixed veggies, and strawberry cheesecake for dessert.  I only had one piece of chicken, though I did try to scrape the sauce off as much as I could.  I had plenty of the vegetables, and only had butter on my potato.  But of course, who could ever pass up strawberry cheesecake???? It was sooooooo creamy and delicious, I just couldn't resist...

Tuesday I didn't really eat anything... I had grapes and a couple cheese slices that were from my lunch, but I was not feeling well... I ended up at the walk-in clinic on Broadway, was diagnosed with a sinus infection, got meds, but was generally unhappy about the treatment from the doctor.  I felt like she didn't really care, because she didn't ask anything except, "What can I do for you?" and, "Fever?"  She didn't ask for medical history, didn't ask for symptoms though I did make sure to let her know, didn't test anything except my temperature, which surprised me, because I'm used to having my ears checked, my throat checked, my lungs listened to... So boo on her...  Anyways, she prescribed me Amoxicillin, on a double dose for the first three days, so my stomach has been kinda wonky since being on these...

Anyways, Wednesday night I didn't really have anything either cuz of my stomach... I had some leftover pineapple and grapes from my lunch as I was heading home, then a bite of banana and a blueberry as I was prepping my lunch.

So tonight, I AM feeling hungry, and I was planning to make some Masoor Daal, but I don't have any of the spices it calls for lol...  But I'm craving lentils, so I'll make some baked curried lentils, yum!  And since I've already posted that one, y'all don't need another pic, right? =P

Happy cooking my friends! =)

Someone That Changed My Life

Well this one is easy, and again it's about Alisha.  Obviously, coming out as bi is a whole life-changing point in itself, but it was Alisha that inspired me to do it.  I care about her a lot, enough to have the courage to finally come out.
