Day 18

Sorry I have missed the past few days for posting, I have been sick and really didn't have the energy to post anything...  I have tried to keep eating healthy though, I've had oatmeal, toast, etc...

Last night for dinner I went to my mom's though and didn't exactly stick to healthy eating... We had spaghetti and sauce, which wasn't too bad... The sauce was home-made and was packed full of veggies and ground beef, but I'm sure there was a bit of salt in it too...  And then for dessert we had my traditional Dairy Queen ice cream cake, though both of us stuck to rather thin slices, so at least it was in moderation =)

Tonight I am making home-made veggie pizza, and it's currently in the oven.  I made a whole wheat crust, home-made sauce, and put tomatoes, red orange and green peppers, red onion, minced garlic, lots of mushrooms (=D), spinach, and marble cheese.  It was pretty thick going into the oven, so I'm hoping it thins out a bit as it cooks lol!  Speaking of which, the buzzer just buzzed, so I'll return in a bit to give a review and post pictures! =)



My Pet Peeves

BAD SPELLING AND GRAMMAR!!!!!!!  Usually it wouldn't annoy me too much if it was an honest mistake, but getting a text that says something like, "omg lik u hav 2 c how awesm this is!!!" irks the CRAP outta me!!!  Seriously, learn how to use whole words rather than letters or numbers.  I don't care if it saves you time, it bugs me and if you can't send me a proper text, don't text me at all.

Day 14

Gonna keep this short because I wanna get eating! =D

Breakfast: apple cinnamon oatmeal sweetened with maple syrup
Lunch: pecans and a cup of tea with maple syrup
Dinner: green pepper and asparagus quesadilla with home-made guacamole, yum!!!


Day 13

I missed posting yesterday, so I will post it now, then post about the rest of today later. Sound good? Good.

So, yesterday was my birfday, yay!!!  Alisha had lots planned for me, and it was a really great day, I super enjoyed it!  As for eating, I didn't do so well in staying healthy...  But being my birthday, I "treated" myself, though I know that in the long run it's actually bad...

For breakfast I tried making blueberry waffles using Alison's recipe (I'll post it at the botttom), but my waffle iron hates me and so that didn't work out... So I pulled out the frying pan and just used the waffle batter to make pancakes =)  They were really good, I was impressed! =D

After breakfast we headed to Vertical Adventures to do some wall climbing!  Sooooo much fun, though I am pretty sore this morning... There wasn't too much we could do by ourselves, just bouldering across and using the self-belaying devices, which there were only 6 of and there were a couple other groups there so we had to wait for those...

We then headed back to my place for lunch. I made us some fried egg sandwiches, and *GASP* I used processed cheese slices..... I just couldn't resist, I LOVE the way the cheese gets all gooey and delicious!  And it was my birfday... *excuses excuses* terrible...

After lunch we walked to downtown to Starbucks so I could get my free drink for my birthday, I was mailed a coupon from there, it was great!  Obviously, the pumpkin spice latte was my drink of choice! =D  From there we walked to the Forks, taking PLENTY of pictures along the way! They will be posted on Facebook sometime today I hope.

For dinner Alisha had made reservations at the Old Spaghetti Factory at the Forks, so that was awesome! =)  I had a tossed salad with no dressing as an appetiser, tortellini pomodoro, and Spumoni for dessert, SOOOOOOO good!!!!! =D  I had water to drink, and I found myself to be very thirsty and downed the water pretty fast.

All in all, I did get a lot of exercise in yesterday, though didn't have the healthiest meals...  I did make some effort though, breakfast was healthy, and I chose a salad at dinner without dressing =)

Healthy Waffles

1 1/2 cup milk
2 Tbsp oil (olive or coconut, or melted butter)
1 tsp vanilla extract
1 Tbsp raw honey or maple syrup
1 1/2 cups whole grain (rolled oats, quinoa, brown rice, etc.)
2 eggs
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt

Mix it all together, and cook in waffle iron.  So simple! =)  I used rolled oats as my whole grain, and was a little wary about it, but it turned out really great!  The batter was pretty watery, but I guess the oats needed it for them to cook, cuz the pancakes turned out great! =)

This is very simple, and I have a great example.  On Friday I judged Logan's friend Randy by first impression... I just did not like him by the way he was acting, he annoyed me and I didn't really want him there at my table.  Done.

Day 12

Mmmmmm, tonight I made veggie stir-fry!  Cauliflower, broccoli, red onion, asparagus, mushrooms, garlic cloves, and bok choy.  The sauce was made from some worchestershire sauce, some soya sauce, and of course lemon and lime juices, YUMM-O!!! =D  Here's the picture:

My Favourite Television Shows

Easy one!!!  House, ER (even though it's not on anymore...), Clone High (even though THAT'S not on anymore either...), Invader Zim (again, not on anymore, but I have it all on DVD, score! =D), and that's about it... I don't have cable and so I don't get to watch any of the new shows that are out... But I can watch House online, so yay!!! =D  In fact, as soon as I post this and my food post, I will go watch it... Sweet! =D

So, basically having the same meal tonight as last night because it was SOOOOOO good!!! Except tonight I have baked chicken drumsticks instead of steak... =P  I seasoned the potatoes the same way, but the peas I left plain, and the chicken I seasoned with cajun spice.  Here's the picture! =)

Day 10

Mmmmmm, so I'm cooking up my dinner as I begin this post, and I'm super excited to show you all the picture!!! =D  I'm making steak, potatoes, and peas.  The steak is seasoned with sage, garlic powder, and Montreal steak spice (salty, I know, but it's steak! =P), the peas had a little bit of butter and cajun spice, and the potatoes have sage, parsley, and sea salt on them, and they look GORGEOUS!!!  Everything's just about ready, so I'm gonna go get my plate ready! =D

Oh my goodness, it all tastes sooooo delicious!!!!! =D  The potatoes are still a wee bit crunchy, just how I liket them! =) Question: can I eat all that steak??? Yes! Yes I can! =D

Day 9

Sorry, I missed yesterday, and honestly it was such a blur yesterday I don't even remember what I had...

But I have a few minutes right now to blog about what I'm having tonight! =)  I decided to just throw together some frozen hashbrowns, some asparagus, some red onion, and some home-made turkey bacon bits I had on hand, cooked them all together in a frying pan, threw some cheese on top, and voila! Dinner is served!  Now I'm typing this as I eat because I gotta be fast, it's pool night tonight and I'm getting picked up soon, so here's the picture! =)

Day 7, One Full Week!

Today marks the end of my first week of following this meal plan! I made it!  Though I'm not really up to posting much tonight... Breakfast was yogurt with fruit and maple syrup, lunch was an apple, grapes and a leftover pancake, dinner was curried lentils and scrambled eggs. Sorry for lack of motivation and picture, I'm just dealing with some emotions right now, but I'll be alright...

People seem to say that there's always something about yourself that you could improve. Right now, there isn't really a certain point that I'd like to get to about myself, but I do know that I have been changing over the years as I grow up and mature. There isn't a point that I want to get to and just stop growing or maturing, whether it be mentally, emotionally, spiritually, or even physically when it comes to staying in shape.  There's always something new to learn or to try, always new ideas that form, and the person I want to be is someone who never stops learning.

Day 6

I am SO excited to show off my dinner picture today!!! =D  I made salmon with lemon juice, freshly ground black pepper, parsley and sage, with steamed broccoli and zucchini and lemon lime rice as sides.  Though I don't have many veggies simply because I didn't have much in the fridge...  But it all look SOOOOOO good!!! =D  I'm actually just sitting down to eat, so I'm fairly excited!!!

I caved into temptation today though and bought myself a coffee from Tim Horton's... Bad, I know, and I won't even try to justify it.  But I was told that if I DID have coffee, only have it once or twice a week, and I've gone all week without one, so there ya go.  But I am trying to go without it at all, so tomorrow's another day to keep going =)

Anyways, I do want to enjoy my dinner, so I will leave you with the picture! =)

Day 5

Gonna keep this one quick cuz it's 11:30pm and I'm pretty tired... Breakfast this morning was oatmeal with banana and strawberry slices, and lunch was a toasted honey sandwich, grapes, cantaloupe, and yogurt (I brought more food but didn't get to eat it lol...)

I made pepper steak for dinner, but I'm not big on beef either apparently... Most of you know I'm not a big fan of pork and won't usually eat it. As I was making this pepper steak, it kept feeling like I was making stew. Don't get me wrong, it wasn't gross or anything! Just the beef flavour wasn't appealing to me... I did make rice to go with it, but I have no idea what I did wrong, but the rice came out like rice pudding: soggy and gross. Soooooo, it got tossed... =( First time I've EVER screwed up rice, go figure haha... So I quickly made some spaghetti stuff I have, though it's not quick spaghetti... I don't remember what it's called, but it's thinner and has a bit of a different flavour... It's not spaghettini, and it's not angel hair... It's good anyways, and it was alright with the pepper steak. Though I don't think I'll make that one anymore.

Someone That's Not In My Country

There's LOTS of people who are not in my country! As for those whom I know? There are a few... There's Wayne's family in the States, but lost contact with them after all that BS went down between one of them and my mom... Kinda miss them... =(

There's a few friends too... Doug, And-WOAH, my micose Joseph, and a few others... But I'm getting tired and I still wanna blog about eating healthy! =)

Day 4!

Today was an interesting day! I'm finding that by eating so healthy, I'm hungry all afternoon! I'm usually okay between breakfast and lunch, but by 3pm, my tummy's rumbling! I even brought so much food today! I had a toasted honey sandwich, a baggy of grapes, a baggy of cantaloupe, yogurt, and half a small bag of baby carrots. I ate the sandwich and yogurt at like 11:30, the fruit at 1:30, and by 3 my stomach was audibly gurgling... I'll have to make sure to buy LOTS of good wholesome snacks when I go shopping this weekend!

I wanna talk about breakfast too today! Mmmmmmm my breakfast was sooooooo good this morning!!! =D I made oatmeal and then cut up some strawberries and threw them in my bowl along with a bit of maple syrup, wow! Amazingly delicious!!! I will DEFINITELY be doing that again often! =)

So, for dinner tonight I made stir-fry, using broccoli, a red onion, one and a half zucchinis, half a leek, and 5 cloves of garlic. Zucchinis, by the way, are a LOT smaller in the store than what I'm used to! My grandfather used to have zucchinis in his garden when he was alive, and they were HUGE! I remember my mom would bring one or two home, run them through the food processor, and throw them in the freezer for when she would make zucchini loaf. These zucchinis at the store are TINY compared to those ones!!!

Anyways, back to dinner. I threw them all in my frying pan with a wee bit of EVOO (extra virgin olive oil, as I will often refer to it as), some soya sauce, some worcestershire sauce, a splash of both lemon and lime juice, some cajun spice, some Indian masala spice, and some freshly ground black pepper. Flavour? Oh yeah, it was there!!! =D I also threw some chicken breasts in the oven for half an hour while I was getting the veggies chopped and cooked, I put the same 3 spices on them as I did the stir-fry. I did the chicken separately mainly because Alisha is over tonight and she's a vegetarian, but also because I was craving more baked chicken, thanks to Kim's dinner last night! =)

I know the sauces I put on aren't very healthy sauces, but they're in my fridge and need to be used up eventually... But I definitely tasted the salt from them! =\

Day 2 & 3

So, I don't have any pictures to post today, sorry... =( Last night I had pool night and so I brought curried lentils leftovers, but I also stopped and bought some baby carrots to munch on, cuz I knew I'd be tempted to order food. I also ended up having a tossed salad without dressing because we ended up at Smitty's since there was a big mix-up with where we were supposed to be and we didn't end up playing... But that's another story.

Tonight we had our monthly staff meeting at work, and dinner was made by one of the staff, she baked a chicken and had glazed carrots, mashed potatoes and gravy, and a tossed salad, with strawberry cream pie for dessert. What did I eat? Raw cucumbers, broccoli and baby carrots, some salad without dressing, some chicken (cuz the skin was removed, yay!), and sliced strawberries for dessert. It was VERY tempting to have potatoes and gravy and pie, but it felt good not filling up on all that salt and sugar! =)

And now, I'm off to enjoy another avocado, I've been enjoying one every night, yum! =)

Eating Healthier! Day 1

Today marks the first day of the rest of my life! Haha so cliche... But I love it! =D

Today is day #1 of following a meal plan that was put together for me by my friend and fellow blogger Alison. It's NOT a diet, as I have constantly been reminded, it is a lifestyle change. It's about eating wholesome foods instead of foods full of salt, sugar, and chemicals that are pretty harmful to our bodies! I've never actually thought about it before, but as I was grocery shopping yesterday, I took a look at a few labels and ingredients lists, and I was amazed at how many things are put in that I can't even pronounce! Alisha was with me, and she said, "If you can't pronounce it, don't eat it!" We were kinda laughing about it, but it got me thinking about how much processed foods I would usually eat, especially since I've been living on my own. Gross!!!

So this morning for breakfast I had half a bowl plain yogurt with a bit of 100% maple syrup and some fruit - an apple, two strawberries, and a handful of grapes, and surprisingly I was full! I remember the days when I would eat 2 bowls - yes, TWO - of breakfast cereal! Mind you, my bowls I have now are larger than the bowls I used to eat from when I was living at my mom's... And I stayed satisfied until it was time for lunch! Usually my tummy begins to gurgle about 10 - two hours after breakfast - but today by the time I had lunch I felt the hunger, but it wasn't audible haha...

And tonight I have made baked curried lentils, and OH MY GOSH it is delicious!!!!! =D I'm actually just finishing up eating as I type this, but I did remember to take a picture to show you, I'll be sure to put it at the bottom! =) I did not make any fresh bread or a salad, but I did cut up a bunch of fruits to have with it! So I guess you COULD say I had an organised fruit salad lol! So here is the recipe:

Baked Curried Lentils:
2.5 cups lentils
2.5 cups water or chicken broth
1-2 cups minced vegetables
2 tbsp. coconut oil
2 tbsp. minced garlic
1 tsp. cumin
1 and 2 tbsp. curry
2.5 cups shredded cheese

Cover 2.5 cups of lentils in water or chicken broth with the 2 tbsp. of curry and cook until all the liquid of absorbed and they're soft. Meanwhile, in a frying pan, saute minced vegetables in coconut oil. Add the minced garlic, cumin, and 1 tbsp of curry, and cook until all veggies are soft. Mix veggies in with the cooked lentils, and stir. Add 2 cups of shredded cheese to the mixture, and stir until cheese is melted through. Pour the entire mixture into a 2qt casserole dish, and sprinkle freshly ground pepper over the top, and cover with another layer of cheese. Bake in a 350F oven for 20 mins. or until warmed right through. Serve with freshly baked bread, or a salad.
