Red Lentil Soup

This is from "Vegetarian: Just Great Recipes (Treats series)". I couldn't find this book online anywhere, though I did find other books from the series.

Anyways, recipe:

Red Lentil Soup
2 tbsp butter
2 medium onions, finely chopped
2 cups red lentils
1 litre vegetable stock
1 tbsp tomato concentrate
Salt
1 tbsp finely chopped fresh parsley
Croutons, to serve

Melt the butter in a large saucepan over medium heat. Saute the onions until lightly browned, about 5 minutes. Stir in the lentils, stock, and tomato concentrate. Season with salt. Cook until the lentils are tender, 25-30 minutes. Remove from the heat and chop in a food processor until smooth. Return to the saucepan over medium heat for 2-3 minutes to reheat. Sprinkle with the parsley and serve hot with the croutons on the side.

So simple right??? And it is soooooooooooo delicious!!!!! =D The entire time it was cooking, I was drooling just waiting for the moment I could taste it. And the wait was well worth it!
